Garden Pasta Salad

 

5 POINTS
per serving


 

Ingredients:

1/2 lb. mostaccioli or small tube pasta
2 tomatoes, peeled and chopped
1 zucchini, trimmed and thinly sliced
3 ounces black olives, pitted and sliced
1/2 cup scallions, chopped
1/2 cup fat-free Italian dressing


Instructions:

Cook pasta in boiling salted water until al dente. Drain and transfer to a salad bowl. Add remaining ingredients and salt and pepper to taste to pasta. Toss and let sit 30 minutes for flavors to meld.

TIP:
The recommended wines are: Fumé Blanc, Beaujolais, or Chenin Blanc.
