TracyD 0 Posted July 29, 2003 Can someone run this recipe through for nutritional info:  This was the recipe given to me, but I did one substitution...so nutritional info for one or both would be deeply appreciated!  Fuit and Bran Muffins  2 cups 100% All Bran (I didn't have that, so I substituted 2c wheat bran) 1/2 cup oatbran or oatmeal ( I used oat bran) 1/2cup whole wheat flour 1/4 cup sugar 1 cup ff plain yogurt (or buttermilk) (I used yogurt) 2 egg whites 1/2 cup applesauce 3/4 cup blueberries 2/3 cup diced strawberries 2 tsp baking powder 1/2 tsp baking soda pinch salt 1 tsp vanilla  1. Mix bran, oatbran, yogurt, applesauce, egg whites, vanilla and sugar. Let stand 2 or 3 minutes. 2. Stir in dry mixture (wheat flour, baking powder, baking soda and salt.) 3. Add fruit and stir. 4. Spray muffin tins with non fat spray, spoon mixture into muffin tins. 5. Bake 15-20 minutes at 400 deg Far. DO NOT OVERBAKE!
