Crockpot Lasagne


1 lb ground beef or turkey, browned

28 oz can diced tomatoes

5 1/2 ounce can tomato paste

1 cup fat free cottage cheese

2 cups part skim milk mozzarella cheese

2 teaspoons sugar substitute

1 teaspoon parsley

1/2 teaspoon oregano

1/4 teaspoon garlic

1/4 teaspoon basil

8 ounces lasagna noodles (broken in small pieces)


Spray crockpot with cooking spray.

Combine all in crockpot, cook on low 7-9 hours.

Crockpot Beef Stew


5 c potatoes, carrots and onions.

3 c water

1 package McCormick Beef Stew Seasonings

2 pounds cubed stew beef


Coat beef in flour and sear in oil in skillet.

Spray crockpot with cooking spray.

Combine vegetables, water and seasoning in crockpot.

Place beef in crockpot and mix with veggies.

Cook on HIGH for 4 hours or LOW for 8 - 10 hours.

A Wok in the Pork

Stir Fry


Amount Measure Ingredient -- Preparation Method

1 tsp olive oil

1 1/4 pounds pork tenderloin -- cut into cubes or strips

2 tsp grated gingerroot

1 clove garlic -- minced

1 1/2 cups chopped green bell pepper

1 1/2 cups sliced carrots

1 cup chopped onions

1 14 oz can pineapple chunks -- (14 oz) undrained

1/4 cup ketchup

1/4 cup white or rice vinegar

3 tbsp brown sugar

2 tbsp reduced-sodium soy sauce

1 tbsp cornstarch

1/2 tsp chili powder

4 cups cooked white rice -- or brown rice



1. Heat olive oil in a non-stick wok or skillet over medium-high heat. Add

pork, gingerroot, and garlic. Cook and stir for 6 to 7 minutes, until pork

is cooked through and begins to brown. Remove pork from wok and keep worm.

Add green pepper, carrots, and onions to wok. Cook and stir for about 5

minutes, or until vegetables are tender.


2. Meanwhile, prepare sauce. Drain pineapple, reserving 1/2 cup juice. In

a small bowl, combine reserved pineapple juice, ketchup, vinegar, brown

sugar, soy sauce, cornstarch, and chili powder. Add sauce to vegetables in

wok, along with cooked pork and pineapple chunks. Cook until sauce is

bubbly and has thickened, and pork and pineapple are heated through. Serve

over hot, cooked rice.

12 ounces linguini -- uncooked

1 cup onions -- chopped

2 cloves garlic -- minced

1 cup fat free chicken broth

1/4 cup soy sauce -- low sodium

1/4 cup ketchup

3 tablespoons seasoned rice vinegar

3 teaspoons lemon juice

3 teaspoons sesame oil

3 teaspoons grated ginger root

2 teaspoons honey -- or brown sugar

1 teaspoon hot pepper sauce

1/2 teaspoon black pepper

2 tablespoons cornstarch

3/4 pound boneless skinless chicken breasts

1 1/2 cups broccoli florets

1 cup sweet red pepper

1 cup carrots


1. Prepare linguini according to package directions. Drain and keep warm.


2. While pasta is cooking, prepare sauce. Spray a large sauce pan (dutch

oven) with nonstick spray. Add onion and garlic. Cook and stir over medium

heat until tender, about 5 minutes. Add broth, soy sauce, ketchup,

vinegar, lemon juice, sesame oil, ginger root, honey or brown sugar, hot

pepper sauce, and black peppe. Bring mixture to a boil, stirring often.

Blend cornstarch with an equal amount of water until smooth. Add to sauce.

Cook and stir until sauce thickens, about 1 minute.


3. Add cookied chicken strips, broccoli, red pepper, and carrots to sauce.

Stir well. Cook for 3- 4 minutes, until vegetables are tender- crisp. Pour

sauce over warm linguini and toss to coat evenly. Serve immediately.

DH who detests anything labels lowfat, diabetic or WW loves this recipe.

Makes 4 servings. I figured 5 pts based on nutritional facts. Found this one on Recipe- Zaar. :)


Nelle's Shepards Pie

1 pound ground round or beef ( I use lean ground turkey)

1 small diced onion

1 can toamato soup ( I use low sodium)

2 cups frozen green beans

2-3 cups prepared mashed potatoes

1/2 cup low fat grated cheese

1 clove minced garlic

pepper to taste


Brown ground beef (turkey) and onion in skillet. Mix turkey mixture, soup and green beans in round casserole dish. Spoon potatoes over mixture, leaving a hole in the center. Top with cheese. Bake at 350 for 1/2 hour or until potatoes start to brown on edges.



I also posted a recipe for sweet peppers stuffed with scalloped corn on the Mess Hall thread tonight. It's too long to retype (I'm too lazy) but it is turning out to be a real favorite with DD and Dh as well as myself. Great lowfat meatless stuffed pepper.

I got this from a post here the 100 favorite recipes. makes 2 FULL 1 cup servings, 5pts each if you follow exactly. I used my points calculator to figure points for the mayo and 2 tbsp of light mayo was 3 pts so I left it out. IMO it didn't affect taste at ALL I also added a little garlic powder and ate with a WW english muffin for 1 point, so if made that way its 3 pts including muffin. This is a SUPER quick and easy lunch.





6 oz. imitation crab meat


2 Tbsp. light mayo


Chopped green onion or chives


1/2 to 1 tsp. mustard


1/4 cup fat free sour cream


onion powder (to taste)


salt and pepper (to taste)


1 cup cooked macaroni noodles



Cook noodles and measure out 1 cup. Run cold water over the noodles to chill them. Mix the shredded or diced crab pieces with the pasts. Mix in green onions or chives. In a separate bowl, mix remaining ingredients. Pour sauce over pasta mixture and stir well. Put it in the fridge for a few hours or overnight to let the flavors blend.



2 big servings, 5 POINTS each

2 point Veggie Pizza


This is yummy and only 2 points per piece!!


You need:

1 thin crust pizza shell (I use Meijer brand, Boboli, etc.)

0-point pizza sauce (I use Ragu)

Kraft fat free shredded mozzarella cheese

red, green and yellow peppers, diced

fresh spinach leaves


red onion, diced

any other 0-point veggies you like



Spray pizza pan with cooking spray. Lay pizza shell on top of pan. Put pizza sauce on top of shell. Sprinkle any herbs and spices you like on top of sauce. (I use basil and oregano) Sprinkle 1 cup fat-free mozarella cheese on top. Then, arrange diced peppers, red onion, sliced zucchini and spinach leaves and other veggies if desired on top. (make sure veggies are dried off before putting on or pizza will be soggy) Bake at temp. instructed on directions for pizza shell for 8-12 minutes or until cheese is done as desired.

*The thin crust pizza shell I buy (Meijer brand) is 12 points for the whole shell, and 1 cup fat free cheese is 4 points. I figure if this pizza is cut into 8 equal slices, it is 2 points per piece. Enjoy!







1-point mock 'Ice cream' sandwiches


You need:

reduced-fat chocolate flavored graham crackers

cool whip light


Break each sheet of graham crackers in half, and put 2 tbsp. cool whip light in between them, like a sandwich. Put in the freezer for at least 2 hours before eating. Each sandwich is 1 point.






Easy Pineapple cake


You need:

1 box yellow cake mix

1 can (15oz) crushed pineapple, in it's own juice

1 (8oz) container cool whip light

maraschino cherries


Mix together cake mix and canned pineapple. Bake in 9x13 pan as directed on cake mix box. Cool. When cool, top with cool whip light and maraschino cherries. 3 points per 1/12th of cake.


* variation: Chocolate cherry cake: make the above cake with chocolate cake mix and light cherry pie filling instead of yellow cake and pineapple. Top with cool whip light and maraschino cherries. 3 points per 1/12th of cake.

Chicken Picatta

main meals | Capers or red pepper flakes, they are interchangeable.



2 breast uncooked boneless, skinless chicken breast(s)

1 tsp garlic clove(s)

1/4 cup fresh lemon juice

1/4 cup all-purpose flour

2 Tbsp canola oil

8 oz mushroom(s)

15 oz canned artichoke hearts, without oil

1/2 Tbsp crushed red pepper flakes




1. heat oil and saute garlic

2. coat chicken in flour and place in skillet - brown each side.

3. add lemon juice, red pepper, artichokes & mushrooms.

4. simmer covered for 30 - 35 minutes.

5. turn and baste chicken occassionally.

1pt Devils food cupcakes


1 box devils food cake mix

1 12oz can diet coke


Prepare cake as directed on back of the box, but instead of adding oils and eggs and those things, just add the can of diet coke, beat, and bake.

Main Dish


Eenie Meenie Chili Beanie Low-Point Chili

(Makes about 20 cups)

Total pts.: 39 for 20 cups = 2 pts./Cup!

6 cans of Chili Beans in Sauce (15 oz. can - I use Aldi's ( a discount chain) brand

2 cans crushed tomatoes (28 oz.) - I use diced - one can of Aldi's *Rotel* gives a nice kick!

12 oz. cooked 90% lean ground beef (about 1 lb. raw)

2 onions, chopped (2 C. or to taste)

chili powder to taste

salt, pepper to taste

Brown the beef and drain well. Combine with all the other ingredients and simmer uncovered 'til the onions are tender, stirring frequently. (If you're in a hurry, you can just warm it through, but the more you cook this stuff, the better it is!)

I served this a coupla weeks ago at a bus Birthday Lunch...and only a few of us WWer's there...everyone raved about it: little meat didn't deter anyone!

1 dozen Mrs. T's frozen Potato and Cheddar Cheese pierogies

1 can (10 3/4 oz) low-fat cream of chicken soup

1 can (4 oz) sliced mushrooms, drained

1 cup frozen peas

2 cups cubed or shredded cooked chicken


Preheat oven to 350. Spray a 2-quart casserole with cooking spray. Thaw pierogies in boiling water for 5 minutes, drain, and place in casserole dish.


In a large saucepan, combine soup, mushrooms, peas and chicken. Cook, stirring, about 5 minutes or until heated through. Pour over pierogies. Bake 15 minutes.


4 servings, 7 POINTS each

Crockpot Sour Cream Salsa Chicken

Amount Measure Ingredient -- Preparation Method

4 skinless boneless chicken breast halves

1 package reduced-sodium taco seasoning mix

1 cup salsa

2 tablespoons cornstarch

1/4 cup light sour cream


Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.


When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

Whole Wheat Pancakes

serves 2 at 4 points each(add pts for toppings)


3/4 cup whole wheat flour

1 tsp baking soda

1 tsp baking powder

1/4 tsp salt

4 packets Splenda

1/2 cup SF applesauce

1 egg

1/2 cup FF milk


combine all ingredients

bake on hot griddle using Pam

top with SF syrup or fruit

I've made variations of this recipe various times , and it is wonderful. I like to use white cake mix with diet orange soda. I top it with whipped topping for a dreamsicle treat.
