Here is a couple of modifications I made to the Baker's Breakfast Cookie Clone

 

Make you own prune puree.

 

3 oz. pitted prunes and 1/2 of hot water in the blender. Omit the 1 tabl. of water in the recipe.

 

I weigh each mound of dough to be 4 ounces

 

The trick is to underbake them a little. they will not brown very much.

 

I put some oats in a small bowl and wet my fingers, pick up some oats with wet fingers and pat the cookies, for look alike the original.

 

Variation #1. Omit fruit and nuts and add 2/3 cup of mini chocolate chips

 

Variation #2 For oatmeal and raisin, omit the nuts.

 

Variation #3 For Chocolate Chip omit the fruit and nuts and add 2/3 cup mini chocolate chips and 1/3 cup of cocoa.

 

Variation #4. for Mocha Chip use 1/2 cup of hot coffee with the 3 oz. of prunes to make puree instead of the water.

 

You could use a packaged mix of diced dried fruit also.

 

When these are cool I wrap each cookie in plastic wrap and then put in a zip lock bag and store in the freezer. To eat: unwrap and defrost/warm in microwave about 15 seconds on medium (50% power or 1/2 power)

1 package instant plain oatmeal

2 - 3 tablespoons applesauce, unsweetened

1/3 teaspoon cinnamon

1 Tbs. Splenda [if you need it; I like the brown sugar one sometimes]

SF caramel syrup, SF Maple syrup? Vanilla extract to taste [optional]

[Oil spray for the cookie sheet]

 

Combine ingredients and spread into a circle on a greased cookie sheet.

Bake at 350 for 8 - 10 minutes.

 

You can add nuts and dried fruit if you like; just remember to add on the points.

 

1 cookie per recipe.

Here is one I found on another site: 3 points per bar:

 

Kashi Soynut Fruit Bars

 

Submitted by Michael of Philadelphia, PA

Makes 12 bars.

3 cups Kashi GOLEAN cereal, crushed

2/3 cup soynut butter

l/3 cup honey

l/2 cup fat free soy milk

l/2 cup whole wheat flour

l/2 cup raisins

Directions:

Crush Kashi GoLEAN Cereal in food processor or blender. Set aside. Melt soynut butter in microwave oven for 60 seconds. Add honey and soy milk to soynut butter and stir well. Whisk in flour, then stir in cereal and raisins. Mix well. Press into 8x8" pan using a spatula. Refrigerate overnight. Divide into 4 quarters. Divide each quarter into 3.

I just made these with modifications and they are great! My version....

 

3 cups of Fiber One Honey Clusters Cereal

2/3 Better N Peanut Butter

1/2 Soy Milk

1/2 cup whole wheat flour

1/2 raisins

 

Same directions...Cal 174 Fat 3 Fiber 4

How much syrup do you use and do you use vanilla extract to?
Maybe a tablespoon of the syrup and I don't usually use extract, although you could.
