WWCarol 0 Posted July 5, 2004 I was on the WW's recipe section and found this kale dish. I made it TWICE today and DH and I both LOVED it!  The poster thinks this recipe came from the WW Annual Recipes, 2003. It's SIMPLE to prepare, and the only points are from olive oil, sugar, and the pasta (I used BULGAR ) you serve it with~  2 tsp. olive oil (1 pt. per teaspoon) Bunch of kale (washed, chopped, tough stems removed) Garlic (2-3 cloves minced, or I used "roasted") Sweet onion Tomatoes (chopped; however I used 1 15 oz. CAN of Petite Diced) Salt and pepper (to taste) About 1-2 tsp. sugar to cut the acidity of the tomatoes~  Saute sliced/ or chopped sweet onion in 2 tsp. olive oil, or until they begin to brown. Add garlic and cook, but do not brown. Add tomatoes (the poster added 1/2 cup of water, but I didn't need it with the canned tomatoes); stir in salt/pepper/sugar. Add kale and cook until wilted.  Serving suggestions:  1.) Toss with pasta (count your points) and serve with grated parmesean (more points).  2.) I put mine over 1/2 cup of cooked bulgar. You can also add a chopped Chicken Sausage (2 pts.) from Costco/Trader Joes. This imparts a nice smokey flavor.  3.) WWCarol 0 Posted July 9, 2004 How about "Creamy Cheesy Kale" dish?!  DD recommended putting in a Laughing Cow wedge, and stirring til melted. DEE-lish! Served over bulgar. Mmmm!  It was very cheesy for my bowl. You could add 1 wedge to the recipe and have it be less cheesy-creamy. Your choice! May you be happy. May you be well. chefbna 10 Posted September 17, 2007 I love kale, too and look forward to trying this. funny... when I went to cluinary school I got yelled at for eating th e"garnishes" when I munched on kale and my mother thought i was nuts when i was plucking it out of her flower beds!
