Quick Classic Gazpacho


2 - 14.5 oz cans diced tomatoes

1/2 * water

2 tbsp olive oil

1 diced seedless cucumber

1 diced yellow bell pepper

1 diced red or white onion

2 minced garlic cloves

1 minced seeded jalapeno

2 tbsp sherry vinegar

2 tbsp chopped parsley

salt & pepper to taste

Process 1/2 * of tomatoes, along with the water & oil, in a blender until pureed. Transfer to a medium bowl, along with the remaining ingredients. Season with salt & pepper to taste. Refrigerate until ready to serve.


Serves: 6


Per Serving:

2 points, 85 calories, 2g protein, 10g carbohydrates, 5g fat, 2g fiber, 227mg sodium

I'm bumping this one up because it is just such a perfect soup for summer. It's cold and lasts a long time in the fridge! I just made a double batch on Monday but I used a slightly different recipe version. This one looks nice and easy to make!
