Veggie Glop Mmmmm

Ok it's really called Ratatoullie, but I don't think I can spell that right. Anyhow it's really scrumptious, we had it over pasta, but I heard it's great over a nice peice of toasty bread as well.


Veggie Glop

Servings | 6

main meals |

26 oz bottled spaghetti sauce

1 medium eggplant(s) peeled or unpeeled

1 medium onion(s)

2 cup mushroom(s)

1 medium zucchini

1 medium green pepper(s)

5 medium plum tomatoes

4 clove garlic clove(s)



chop all veggies into chunks add pasta sauce

place in crockpot and cook 4-6 hours on low


Chef's note...my crockpot is denying it's existence as a "slow" cooker, if you have a normal slow cooker and not a Rival "I want to be an oven" Smart Pot, the original recipe calls for 6-8 hours on low, also original recipe didn't call for mushrooms, but you can pretty much toss any veggie into this and it'll still taste good. :crazy:
