WWCarol 0 Posted November 12, 2004 Yesterday I made this *family favorite* soup for the first time with a pack of instant refried black beans [note: I haven't been able to find them anymore ]! It could not have been any easier!! Thus, the new name:  Easy-Sneezy Black Bean Soup  2 tsp. oil 1 large onion, chopped 1 can tomatoes (28 oz.), diced 1 3/4 or 2 3/4 C. regular strength chicken broth 3 cans (15 oz. each) black beans, drained and pureed, or ONE package (7 oz.) instant refried black bean mix 1 fresh jalapeno chili, stemmed/seeded/minced 2 tsp. whole cumin seed Condiments  In a 5-6 qt. pan over medium heat, stir onions in oil until golden. Add 1 3/4 C. chicken broth (or 2 3/4 C. if using the instant bean package), tomatoes and liquid, beans, jalapeno, and cumin.  Bring to a boil; simmer uncovered until thick and flavors blend, 7-10 minutes. Serves 4.  Calories: 273, 15 g. protein, 5.2 g. fat, 43 g. carbo, 855 mg sodium  Condiments: FF shredded cheddar cheese, FF sour cream, fresh cilantro, RF tortilla chips (use your WAPS for these :bcbsalute ) and lime wedges.  Hope you enjoy this as much as we do!!
