Easy-Sneezy Black Bean Soup

Yesterday I made this *family favorite* soup for the first time with a pack of instant refried black beans [note: I haven't been able to find them anymore :sobbing: ]! It could not have been any easier!! Thus, the new name:


Easy-Sneezy Black Bean Soup


2 tsp. oil

1 large onion, chopped

1 can tomatoes (28 oz.), diced

1 3/4 or 2 3/4 C. regular strength chicken broth

3 cans (15 oz. each) black beans, drained and pureed, or ONE package (7 oz.) instant refried black bean mix

1 fresh jalapeno chili, stemmed/seeded/minced

2 tsp. whole cumin seed



In a 5-6 qt. pan over medium heat, stir onions in oil until golden. Add 1 3/4 C. chicken broth (or 2 3/4 C. if using the instant bean package), tomatoes and liquid, beans, jalapeno, and cumin.


Bring to a boil; simmer uncovered until thick and flavors blend, 7-10 minutes. Serves 4.


Calories: 273, 15 g. protein, 5.2 g. fat, 43 g. carbo, 855 mg sodium


Condiments: FF shredded cheddar cheese, FF sour cream, fresh cilantro, RF tortilla chips (use your WAPS for these :bcbsalute ) and lime wedges.

This recipe is absolutely the best!! Made is last year (just because it was good) and I'm making it this year because it's good and it's CORE! IT'S DELISH!! Thanks, Carol. :D
