Baked Oatmeal....great easy breakfast!

Baked Oatmeal


This recipe is 2 points per serving. It's really good, tastes like oatmeal raisin cookies. It turns out almost like granola bars.


4 egg whites

1 tablespoon canola oil

1/2 cup light brown sugar, packed

2 teaspoons baking powder

1/4 teaspoon salt

3 cups oats

1/8 teaspoon cinnamon

3 tablespoons raisins


12 servings

40 minutes 10 mins prep



1. Preheat oven to 350.

2. In medium bowl, beat egg whites with fork.

3. Add oil, sugar, baking powder, salt, cinnamon and raisins.

4. Mix well.

5. Add oatmeal and mix well.

6. Spread into a sprayed 13x9 pan

7. Bake 25-30 min or until edges are light brown.

I got this recipe from recipezaar. Tried when the grandkids were here and even the two that don't eat oatmeal (or anything nutritious for that matter!) loved it!

Wow, as they say, great minds think alike. I just pulled this recipe out of the archives and made it for myself. Besides the fact that its delicious, it can also be cut up, packed individually and frozen, for a quicky breakfast when in a hurry or whatever.

I adore oatmeal...I am excited about trying this recipe! I eat oatmeal at times for desert even...ok I know I'm off the deep end there but I actually do use it that way:D With peach sauce from trader joe's it's like having a peach cobbler.
