Crockpot Sour Cream Chicken

I made this for the first time tonight and loved it.

 

4 chicken breasts

1 package taco seasoning

1 c. salsa

2 Tbsp. cornstarch

1/4 c. light sour cream

Spray crockpot with Pam spray. Add the chicken. Sprinkle with taco seasoning. Cover with salsa. Cook 6-8 hours on low. Remove chicken. In a small amount of cold water, mix cornstarch and add to the salsa mix. Stir in sour cream and mix well. Turn pot to high and let heat until thickened. Divide over chicken. Serves 4 Points 3

SUZI Q,

This is one of DH :buddysmoo and my favorite recipes. I keep it in my recipe rotation and it is usually made once every two weeks. It was one of the first recipes I found here on BCB and we just love it. I serve it over a big bed of shredded lettuce, and we top it with diced tomatoes and onions to try to keep it very low in points.

I've tried this with leftover deli chicken heated in a skillet. Add the sour cream last as per the recipe and you can also omit the corn starch if cooked this way.

I am so excited!! I am going to be cooking a lot of great stuff this weekend, hopefully it will show in next weeks wi. I have been struggling with cooking stuff that I enjoy and my family will eat, so glad I have a chance to actually look on here. Thank you everyone for the awsome recipies!!
