Crispy Chicken

Four 4 oz. Skinless, boneless chicken breasts

 

1/4 C. Fat Free Ranch Dressing

 

1/2 C. Corn flakes-Crushed

 

Spices of choice (parsley, garlic powder, onion powder, etc)

 

Salt (optional)

 

Pam

 

Preheat oven to 350° F.

 

Mix spices, salt, and corn flakes in a bowl and set aside.

 

Dip Chicken in Fat Free Ranch Dressing. Roll chicken in corn flake mixture.

 

Spray rack with pam. Put chicken on rack on a cookie sheet. Cook until chicken is done, about 45 minutes to 1 hour.

 

Makes: 4 hearty portions WW Points: 4.5 pt.

This was yummarooooooooooooo! I made my hubby fried chicken last week and made this for myself. This is a keeper! Thank you!!!

I made this last night, and while I def. liked it, I wouldn't use a rack under the chicken. Next time I will just bake it directly on the baking pan. The rack made it squishy on the bottom. Plus, I had one little chicken piece that wouldn't fit so it was directly on the pan, and it was way crispier than the others. Just FYI. :)

That's funny that it made it squishy for you with the rack - whenever I do breaded chicken in the oven I find that I have to use a rack, otherwise it will go soggy if it's directly on the cookie sheet. Maybe it has to do with the type of oven or something.

Another thing to make it Core...you can use Hungry Girl's favorite thing, and put Fiber One in the food processor and use that as your breading. I had it on the poppers, and it was really tasty!

Made this last night & it was a hit! My 4 & 6 yo's actually ate all of their chicken w/out whining about it. Super-easy & something w/out kids whining is a hit at my house:bcb_up

Technically, using Fiber One would still not be Core as cold cereal must be eaten with ff milk or yogurt.

Per eTools, 1 cup of corn flakes is 2 points, which crushes down to about 1/2 cup...so Core Buddies would only count .5 points per serving/chicken breast.

I've made this recipe before, and it's really worth the 1/2 of a point!

I made this recipe for the first time tonight. I made it on the rack and it was super crispy. I loved it and DBF really enjoyed it too...he said it is much better than his mother ever made!
