Paris Madeleine 0 Posted March 2, 2005 Hamburger and Cabbage Soup  Mist of olive oil 1 large yellow onion 1-2 tbsp minced garlic 1 lb lean (93%) ground beef Red pepper flakes to taste 2 10-oz bags angel hair cabbage 1 32-oz can tomatoes 2 tbsp lemon juice Salt, pepper, paprika, nutmeg, cinnamon, Splenda to taste 6 cups low-fat broth or stock  Sauté the onion and garlic in the oil. Add beef and brown. Add in red pepper flakes. Add in the tomatoes, lemon juice and spices. Add in the cabbage. Cover to wilt cabbage. Â This is actually close to my mom's recipe for cabbage soup, except that she doesn't use hamburger meat but uses short ribs or meaty soup bones instead. I would use a leftover piece of lean steak, which would eventually fall into the requisite (for my family) long stringy shreds of meat. I'd also add a large grated carrot.
