Can anyone help me find a recipe for low point chili?

This recipe makes a LARGE Crockpot of chili--21 cups--but it's only 1 point per cup!!!

 

12 oz. Boca Ground Burger 6 pts.

1 can Mexican style stewed tomatoes, chopped

2 cans chopped/diced tomatoes

1 can red kidney beans, chopped slightly

1 can chili beans, chopped slightly 6 pts.

1 lb. 12 oz. can Bushes baked beans bold & spicy 12 pts.

4 cups water

1 onion, chopped

1 red & 1 green pepper, chopped

2 C. fresh mushrooms, chopped

1/4 tsp. allspice

1 Tbls. sugar

2 pkgs chili mix (use your favorite kind, mild to hot)

 

Put everything in the Crockpot on low for 6-8 hours. This was a "soupy" chili. If you want to thicken it up, whisk together 1 small can tomato paste, 4 Tbls. flour and 1-2 cups of the chili liquid and whisk into chili. This thickened it nicely and doesn't change the taste.

 

Total points: 24 21 cups I'm calling it 1 pt. per cup

 

At 1 pt. per cup, you can add low-fat cheddar cheese and low-fat sour cream and have some SERIOUS chili!!! Enjoy!!!

Othis is awsome. I doubled the recipe and said it was 25 cups but I am sure it made 30 + counted it as 2pts because I would rather be higher then lower. I added 97% FF turkey 20 oz I used a big can I think 2lbs chilli beans family was in heaven I got to eat 2 cups worth :)

Wow, this does look good. I love making crockpots full of stew/chowders and just feeding off of them all week. :D

 

I'll use ground turkey as well. :headover:
