Slow Cooker Beef Stew ~ 5 Points

Hi all,

 

Since several have requested this recipe, I am posting in the recipe forum, as well as in the 50 Plus section. April (from 50+) originally gave me the recipe, I just added the barley and potatoes, and ran it through my WW Online Recipe Builder. Note: I did not add the potatoes when I made it - it was very thick, even without them!

 

April's Slow Cooker Beef Stew

Ingredients

 

1 pound lean beef round, in bite-sized pieces

1 Tbsp olive oil

5 medium carrot(s), chopped

4 medium stalk celery, chopped

2 small onion(s), chopped

1 clove garlic clove(s), minced

2 Tbsp Williams Beef Stew Seasoning (or any beef stew seasoning)

4 cup water

4 leaf bay leaf

3 large whole uncooked white potato, cubed

14 oz canned diced tomatoes, undrained

2/3 cup uncooked barley

2 Tbsp all-purpose flour

 

Instructions

 

Brown beef in olive oil. Dice vegetables. Put carrots, onions, celery in crockpot. Mix in garlic and seasoning packet. Add beef, water, tomatoes, and bay leaves. Cook on low 6-8 hours. Then add potatoes and barley and cook on high 1-2 hours. Combine flour with 1/2 cup of water, and add to crockpot in last 15 minutes of cooking.

Everything is in but the barley, don't have any, and not sure if I like it.This looks yummy, thanks buddy.

If you leave out the barley will the pts. change because of the fiber? I have 5 inches of snow on the ground with a layer of ice underneath it:crazy: , so I plan an indoor day and no runs to the Wallyworld. Thanks for the great recipe
