cybergranny 0 Posted March 9, 2005 * Exported from MasterCook *  *Angel Hair Pasta with Shrimp and Spinach  Recipe By : Serving Size : 4 Preparation Time :0:00 Categories :  Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces angel hair pasta -- uncooked 1 pound large shrimp -- peeled and deveined 1/4 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon olive oil 1/4 cup shallots -- finely chopped 1/2 cup chicken broth, low sodium 99% fat free 2 tablespoons lemon juice 6 cups spinach -- coarsely chopped 1 tablespoon capers   Cook pasta according to package directions, omitting salt and fat. Drain. While pasta cooks, sprinkle shrimp with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add shallots; saute 30 seconds. Add shrimp; saute 3 minutes. Remove shrimp mixture from pan. Add chicken broth and lemon juice to pan, scraping pan to loosen browned bits.
