Broccoli Cheddar Muffins

Broccoli Cheddar Muffins

(12 muffins at 140 calories each)


2 cups flour

2 tsp. baking powder

1 1/2 tsp. baking soda

1 Tbsp. sugar

1/2 tsp. salt

1 egg white

1 1/2 cups buttermilk

1/4 cup vegetable oil

1/2 cup reduced fat cheddar cheese

1 cup chopped steamed broccoli


1. Preheat oven to 375. Spray 12 cup muffin tin with Pam.


2. Sift flour, baking powder, soda, sugar, and salt together


3. In another bowl, whisk together egg white, buttermilk and oil.


4. Gently fold together wet and dry mixtures. Gently stir in

broccoli and cheddar.


5. Pour into muffin tins and bake for 25 minutes, until golden

and firm.

Sooooo good - I love these! Nice size, too. Perfect for soup.

I used whole wheat flour and instead of buttermilk, I put in FF milk and 1 1/2 tb lemon juice . Worked out to 2 pts/muffin
