Southwest Chicken Soup

1 pound chicken breast, no skin, no bone, R-T-C -- (cut into pieces)

1 cup diced onion

3 cloves minced garlic

1 teaspoon ground cumin


15 1/2 oz navy beans -- (I use Bush's navy beans)

31 ounces chicken broth, ff, reduced sodium

2 cups salsa -- (your favorite heat)

1 cup frozen corn kernels


Coat saucepan with cooking spray, heat 1 minute on burner then add chicken

breast and brown lightly. Add the diced onion and minced garlic, cook

until chicken is done. Add the cumin and stir.


Simmer for 20 minutes.

Now what I do.........


I use the original amount listed in the recipe for the

chicken,onion,garlic, cumin & corn. Then I double the broth, beans and use

the entire (16 oz) jar of salsa (I use mild Pace cilantro). It makes 11-12

cups of soup and the points value I calculate at 3 points per cup. It's

still super meaty too.

from fat); 18g Protein; 29g Carbohydrate; 10g Dietary Fiber; 23mg

Cholesterol; 214mg Sodium. Exchanges: 1 1/2 Grain(Starch); 1 1/2 Lean

Meat; 1/2 Vegetable; 0 Fat.


Serving Ideas : Serving Size = 1 cup


NOTES : Icing, you are so right, it is 3 points per cup and looks

This looks good. Questions tho.


If you double the beans, in Mastercook it comes out to 334 calories. With one can, it comes out to the 198


Is the 31 ounces of chicken broth what you use? Or is it doubled to 62 to make the 11 cups?
