I can't remember where I found this recipe so I don't know who to give credit to. I'm sorry:embarrass . It is a wonderful recipe!

 

Rice Pizza - 6 servings

 

3 cups cooked brown rice

2 eggs, beaten or equivalent in egg substitute

4 ounces shredded lowfat mozzarella cheese (I used FF for core)

8 ounces lean ground turkey or ground beef (I used the 96/4 I find at Wal-Mart)

1/2 c. chopped onion

sliced fresh mushrooms

1 3/4 cups tomato sauce (one 15 oz. can)

1 tsp. Italian seasoning

1/4 c. grated FF parmesan cheese (omitted as I couldn't find FF)

 

Preheat oven to 450 deg.

 

Spray a 12" pizza pan with cooking spray.

In a medium bowl, combine rice, eggs and 1/4 c. mozzarella cheese. Mix well. Spread rice mixture evenly on pizza pan (it becomes the crust). Bake 20 minutes.

 

In a skillet, brown meat and onion. Add mushrooms and cook until tender. Remove from heat.

 

In a small bowl, combine tomato sauce and Italian seasoning. Spread sauce evenly over baked crust. Top with meat mixture. Evenly sprinkle Parmesan cheese and remaining mozzarella cheese over top. Bake an additional 10-15 minutes. Let set 5 minutes. Cut into 6 pieces.

 

(2 cups uncooked rice usually cooks to about 3 cups).

 

I added several pieces of Canadian Bacon also.

thinking about switching to core, and I love this kinda thing. I like to eat healthy, so this sounds SO yummy! I am going to try it. I have almost everything for it, I am impressed!

This was really good. I did add a ton of veggies.....green pepper, onion and mushrooms. Very filling too. Will definitely make again. We only had 1 slice each so there is plenty for lunch tomorrow. Thanks for sharing this recipe.

I made this last night while everyone else had take out pizza. It was a great alternative to the high point take out. I added onions, peppers and mushrooms as well and enjoyed it. There is a guy at my work that eats brown rice for lunch everyday, so I am going to bring him some tomorrow and see how he likes it.
