Granny Smith or Braeburn apples, cored & chopped 1 8oz. can unsweetened crushed pineapple, DON’T drain it! 1 1oz. box sugar-free instant butterscotch pudding 1 8oz. container fat-free Cool Whip (15 cal. X 25 servings = 375 cal./ 7=53=1pt.) chopped peanuts (optional) Mix first 3 ingredients well. Gently fold in Cool Whip. Chill. Sprinkle peanuts on top when served if you want (but count the extra points). Total pts.=7 Yield—app. 7 cups 2 pts. per cup!!! (Add pts. for peanuts if you use them) Ginny’s comments: The original recipe calls for adding 1 cup miniature marshmallows but I HATE marshmallows!! Besides, it ups the points value a lot! If you don’t like pineapple, I have also made this with unsweetened apple sauce—I used one of the individually packed containers—probably ½ C. I love caramel apples, but this was waaaaaaaay too sweet for me and I'm not sure that the color of butterscotch pudding is found in nature! I didn't add the marshmellows, so maybe that would have made a difference but I'm thinking it would have been even sweeter! Anyway, I toned down the sweetness by adding a bunch of nonfat plain yogurt (which also toned down the color!) but I don't think I would make it again.
