Cowboy Stew (CORE, vegan)

This was a great dinner tonight. I was pleasantly surprised. It has tons of fiber and it's so flavorful. It seems like a lot of ingredients at first glance, but it's very simple. I can't wait to make it for the family.

 

1 tbsp veg oil/Pam

3/4 cup chopped onions

3/4 cup chopped green bell pepper

3 cloves garlic, minced

2 tbsp. chili powder

1/2 tsp. cumin

28 oz. diced tomatoes with green chiles

1 1/2 cups morningstar crumbles

1 1/2 cups canned kidney beans, drained and rinsed

1 cup canned corn kernels, drained

 

Heat the oil over med-high heat. Add the onions, bell peppers, and garlic; cook, stirring, until softened, about 2 minutes. Stir in the chili powder and cumin until absorbed.

 

Add the tomatoes and bring to a boil. Stir in the crumbles, kidney beans, and corn.

 

Heat thoroughly and enjoy!

 

At four servings, it is 4 points each (none for CORE). That's a big bowl and it's very good and filling.

 

PS- I calculate points based on calorie and fat content, adding up everything using calorieking.com and dividing

Sarah,

 

Is there a typo in the recipe? Are you really supposed to use 3 TABLESPOONS of chili powder? I only used two TEASPOONS when I made it this evening and it was still pretty hot. My dh has a high heat tolerance and even he said it was a little too hot.

 

That said, this was so easy to make and it was pretty good (aside from the heat factor). I think the next time I make it, I will use Mexican Seasoning instead of the chili powder.

PS: This recipe would be really good partnered with Barbara's savory cornbread recipe. My dh asked me to make it with cornbread next time so that he could spoon the stew over the cornbread in his bowl.

I know this is coming late, but I never noticed the posts:embarrass

 

I will have to check if it's a typo, but I do remember it having a lot of flavor and I am from Texas, love spicy stuff, so I'm sort of immune to it.... will check my recipe when I look it up to cook it this week!

Made this and it came out good. Used 3 tsp chili powder, added mushrooms and did in the crock pot. Thickned with cornstarch and served over brown rice. I also used some of the leftovers as filling in omlettes. I'd make this again.
