Mini-Quiche

BREAKFAST MINI-QUICHE (makes 8 servings)

 

3 egg whites

2 eggs

2 tablespoons water

3 oz. low fat cheese (I used mozzarella - 60 cal/oz)

1/2 cup red bell pepper (diced)

1/8 cup shallots or onion (diced)

1 cup spinach leaves

 

Preheat oven to 350. Mix all together and put in muffin tins sprayed with cooking spray. Bake at 350 for 20-30 minutes or until golden brown. Serve with salsa if desired. Can be refrigerated and heated the next day - delicious! (Calories will vary - you can use all egg whites for lower calories, or 3/4 cup Eggbeaters).
