zuchini(sp)

I have been dipping zucchini in egg white and then breadcrumbs seasoned with salt, pepper and a little light parmesan. I then put these on a cookie sheet sprayed with Pam and bake in a 425 degree oven until crispy and browned. I make a dip with light mayo, light sourcream and chili garlic sauce (rooster brand available at most oriental stores) The point count depends on the measurements of all ingredients - I weight the breadcrumbs out and then subtract what is left over in the bowl at the end. This is a very filling meal if you add some protein (sometimes I'll put a chicken breast in the same breading and throw it on the sheet with the zucchini) Hope this helps.

You guys might do a search down in the recipe forums. I know I've seen lots of recipes for zucchini in the side dish and dessert forums. My squash is just beginning to some in!:crazy:
