This is a family favorite.

 

From Gooseberry Patch Meals in Minutes

 

Mini Meat Loaves

Serves 8

5 Points

 

1# 90% hamburger

16 oz Pillsbury Grands Buttermilk biscuits

1/4 c catsup, divided

1/2 c onion, chopped (optional)

1 egg, beaten

1/4 c quick-cooking oats, uncooked

1/2 c shredded Cheddar cheese

 

Divide and press biscuit dough across the bottom and up the sides of 8 greased muffin tins; set aside. Combine hamburger, 1/2 of the catsup, onion, egg and oats in a medium mixing bowl. From into 8 balls; place one in each biscuit cup. Spread remaining catsup on the tops; sprinkle with cheese. Bake at 350 for 30 minutes.

 

If I could I would use about 3/4 of a pound of hamburger. I made these again tonight and realized I tossed about 1/4. I portion out my hamburger into 1# packages.

 

These are very big and very filling.

Hmmm Ok, how can we make this less points?? Use Egg Beaters, 2% cheese, 97% lean meat???? Do they make Grands Light???

 

Can someone make some changes and run through Master Cook?

I thought I would let you know I made another version of mini meatloaves that I found on this board and my whole family loved them! I used turkey burger and a box of stuffing mixed together cooked at 350 about 45 mins in muffin tins 2 points each they were really great:D

These sounded fantastic, so I thought I'd see if it could be lightened any further by looking up the nutritional info on the reduced fat grands. One regular Grands biscuit is 5 pts, a reduced fat biscuit is 4 pts.

 

How can each serving possibly be 5 pts? Am I missing something, or are the points off on this recipe?

I saw the OP's note to "Divide and press biscut dough..." - could they mean to only use 1/2 the biscut per hole? That would make better sense re: the points - IMO.

 

I know pilsbury makes some LOW FAT breadsticks - do they make LF/FF/RF Grands?

 

I might omit the cheese to save a 1/2-1point even with RF/FF cheese.

I wonder how it would work if you used pieces of a La tortilla wrap ( 1 pt )

 

or Italian Flat-out Bread ( 1 pt ) instead of the Grands! Probably wouldn't

 

taste near as good, huh?? I would definetly use egg whites and FF cheese.

 

That could get the pts down to around 2 for 12 "muffins". ( ? )
