Pepperoni Pizza Pasta

I found this under 30 minute Mainstays...

 

 

Pepperoni Pizza Pasta

8 ounces uncooked bow tie pasta

1 large onion, chopped

1 1/2 cups julienned green pepper

1 1/2 cup julienned sweet red pepper

2 garlic cloves, minced

1 tablespoon olive or canola oil

1 can (14.5 oz) stewed tomatos

1 1/2 teaspoon dried basil

4 ounces turkey pepperoni, halved and sliced

1 cup diced fresh tomatoes

3/4 teaspoon salt

1/4 teaspoon pepper

4 ounces part-skim mozzarella cheese, diced

crushed red pepper flakes, optional

 

Cook pasta according to package direction. Meanwhile, in a large nonstick skillet, saute the onion, peppers and garlic in the oil until vegetables are crisp-tender. Add stewed tomatoes and basil. Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. Stir in the pepperoin, diced tomatoes, salt and pepper. Simmer for 2 minutes. Drain pasta; add to the tomato mixture. Add cheese and toss well. Sprinkle with papper flakes if desired. Yeild: 9 servings

Nutritional Analysis: One serving (1 cup) equals 213 calories, 6gr fat (2g saturated fat), 22 mg chol, 585mg sodium,29g carb, 3 gr fiber, 12g protein. Diabetic Exchanges: 1 1/2 starch, 1 lean meat, 1 vegetable

Thanks Icing..this looks like a definite must try.

 

I buy my turkey pepperoni (by Hormel in a bag) in the packaged lunchmeats section of my local Krogers. It is on a stand next to the lunchmeats in most of the ones here in the Metroplex. They also make a canadian bacon (pizza size) that is pretty good.

Isn't that pepperoni awesome, Arlene! I keep it on hands always. We slip it into omelets, put it on sandwiches and just much it out of the bag. SOOOOO good and guilt free too!
