Blueberry-Lemon Muffins

These are some of my favorite muffins!

 

Blueberry-Lemon Muffins (from Cooking Light)

 

1 1/2 cups all-purpose flour (I used 3/4 cup whole wheat, 3/4 cup all-purpose)

1/2 cup yellow cornmeal

1/2 cup sugar

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

1 cup blueberries (I used frozen)

1 cup low-fat buttermilk

3 T. butter, melted (I used 1 T.)

1 T. grated lemon rind

1 large egg, lightly beatn

Cooking Spray

1 T. sugar (I omitted)

 

1. Preheat overn to 400 degrees.

2. Lightly spoon the flour into dry measuring cups and level with knife. Combine flour through salt in a medium bowl. Stir in blueberries, make a well in the center of mixture. Combine buttermilk, butter, rind, and egg; stir well with a whisk. Add to flour mixture, stir until just moist.

3. Spoon batter into 12 muffin cups coated with cooking spray; sprinkle evenly with 1 T. sugar. Bake at 400 degrees for 20 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pan immediately; place on a wire rack.

OMG these sound soooooo awesome, another one of my favorite things......... anything with lemon, I can't wait to try them. :exercise2

OMG .. these are to DIE for! Thank you Suzie for posting this!

I had never used cornmeal before .. but it gave the muffins a GREAT texture.

 

Modifications:

1. I made my own buttermilk, with 1% milk and lemon juice, which just enhanced the lemony flavor of the muffins.

2. I used more than 1 Tbl of the grated rind .. not sure how much more tho.

3. I used splenda blend in place of the sugar.

4. I used 1/4 cup eggbeaters in place of the egg.

5. I used 4 Teaspoons of melted butter.

 

Points came out to 2.4 points per muffin.

They are fantastic! A certain keeper!
