Almond Joy Pudding

Hello, Fellow Corebies!

 

Okay, I know that this recipe sounds kind of weird, but I LOVE Almond Joys, and had to try it. It was very tasty! :) Enjoy!

Almond Joy Pudding:

 

2 Cups Skim Milk

1 Box Jell-O Sugar-Free Fat-Free Chocolate Fudge Pudding Mix

2 tsp. Coconut Extract

1 Cup Raw Oatmeal

 

Mix milk and pudding mix together for 2 minutes or until thick. Add coconut extract and oatmeal. Mix well. Refrigerate for 1 hour. Tastes like a Mound's Almond Joy Candy Bar!

I'm assuming quick oats?? this sounds wonderful and I love Almond Joy! I've done the pudding/extract but never thought of the oatmeal ...kind of a Mountain Bar effect...

I posted this earlier this week on the WW Core website - it is absolutely fabulous - I used plain raw oatmeal (uncooked) - you really need to let it set in the refrigerator for at least an hour - the oatmeal absorbs the moisture, so that when you chew it, the taste and texture is like oatmeal. Definitely a keeper

The way I figure...once you serve this...sprinkle with a few sliced almonds and count the points. I'm not sure how many points that would be.( I think I read somewhere that 22 almonds equal 4 pts...but I'm not exactly sure) ....My ww books are at home. But one or two sliced almonds cant add too many points to this recipe. This recipe sounds delicious.

 

Anyone know the exact points for the almonds?

Thats a good idea. I hadnt thought of that. I think the sliced almonds would make it more real for me though...more like the candy.

You all, this sounds intriguing to me as well. I miss my almond joys! I think I will splurge and add almonds as well.

 

I looked almonds up: 1 oz or 23 nuts is 4 points.

 

Hmmmm, I wonder how many servings your pudding mixture makes?? Thanks for the recipe! (I think I might wait a little while, as I am still reeling from Christmas!!)

I saw this recipe on another board... it called for Almond extract as well as the coconut.

 

I wasn't crazy about this recipe... was kind of disappointed that I spent almost $8 on almond and coconut extract($3.89 each) and didn't like it. I guess that's the hard part of trying new recipes. Now I need to find something to do with the exracts I bought...any ideas anyone?

Yo-yo~ I tired this with almond and coconut and didn't like it either. The almond is over powering even in a small amount. I don't know if that was your problem but maybe try it with just coconut.

Christine this is delicious. I made it just the way you said. I find that the longer you leave it in the fridge the better it is. The oatmeal gets the texture of coconut. Thanks for a wonderful recipe.

I made this yesterday morning and used canned milk. I don't think this is a good recipe for canned milk. However, today it's pretty good and I bet it would be fabulous if I had used regular skim milk. Refrigerating at least overnight really does make a difference.

With Core there is no "limit" on this, but the key is eating to satisfaction. Also, you still need to fulfil your 8 healthy guidelines.

Made some of this today and it was really good. I liked the chewy and seemed just right for a nice dessert. I sprinkled some sliced almonds on top and it was quite tasty.
