feta-stuffed chicken

I thought I had found this recipe here, but can't seem to find where I found it to bump it up, so I'll just repost it. Thanks to whoever originally posted it. This dish is very yummy. Even my non WW DH loved it. I just upped his portion size.


Feta-Stuffed Chicken - 4 @ 4 - Very Good

16 ounces boneless skinless chicken breast halves -- (4 at 4 oz each)

1/4 cup dry bread crumbs

1/4 cup crumbled feta cheese with basil and tomato

Vegetable cooking spray

butter flavored spray -- (originally 1 1/2 tsp margarine)

3 cups torn spinach

1/2 cup chopped fresh basil

1 tablespoon balsamic vinegar

1 teaspoon olive oil

1/8 teaspoon pepper


Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Dredge chicken in breadcrumbs. Spoon 1 tablespoon cheese onto each piece of chicken; fold chicken in half.


Place folded breast halves in a 13x9 baking dish coated with cooking spray. Drizzle melted margarine over chicken (I skipped the margarine and sprayed them with butter-flavored Pam - kc). Bake, uncovered, at 400 degrees for 25 minutes or until chicken is done.


Combine spinach and basil in a bowl; drizzle with vinegar and oil. Sprinkle pepper over salad; toss well. Serve chicken over salad.

Yum, this sounds good. Think I could use gorganzola instead of feta? I already have it in my fridge. Big difference in the flavors tho...hmmmm.....

Lori, I bet gorganzola would taste great! I have some in my fridge, too! If I try it (probably tomorrow) I'll come back and post.

I just put it in Mastercook. The NI came out Per Serving (excluding unknown items): 195 Calories; 5g Fat (23.8% calories from fat); 29g Protein; 7g Carbohydrate; 1g Dietary Fiber; 72mg Cholesterol; 224mg Sodium. Exchanges: 1/2 Grain(Starch); 4 Lean Meat; 1/2 Vegetable; 0 Fruit; 1/2 Fat.

I'm going to try this one! I had to SQUINT at the screen, wondering what you meant by "Tom Spinach." Spinach with tomatoes? Doh, I finally figured it out... TORN spinach. Yow I was picturing cooked spinach with tomatoes in it! Heh...


I am new-ish, recommitted after 3 years or so off the wagon. I have ~32 pounds to lose now. Anyone knwo how I get my little ticker image to display?

This recipe is delicious! I made it with a garlic and herb infused feta cheese and on the side I made whole wheat spaghetti tossed with olive oil & garlic. My boyfriend, who is not on WW and does not need to be, ABSOLUTELY loved it. He's been begging me to make it since the last time, which was only 3 days ago! Delicious recipe!!
