Core Oatmeal Pancakes

These are incredible. I've been making these and using them as a base for sloppy joes, ground meat dishes....and as pancakes. Oh, yeah!

These are fantastic. I always have to make a double or even triple batch because my wife and kids love them too. I put everything in a blender until smooth and let it sit for a few minutes. I also use whole eggs instead of whites, so the batter is a little thinner, but the pancakes are light and fluffy. I used 1/4 cup splenda in a double batch, white corn meal and old fashioned oats (not the quick cooking kind, but that works well too). Made this way, a double batch yields about 12 4" pancakes. I make these on Saturday mornings as a treat for the kids too!

I found this one on WW Online, and we tried it this morning. It came out delicious (IMO). I served them with ICBINB Spray and some DaVinci Syrup.

Core Oatmeal Pancakes

 

1/4 cup oatmeal

1/4 cup cornmeal

1/2 tsp. baking powder

1/4 tsp. baking soda

4 packets splenda

1/2 cup ff plain yogurt

1 egg white

 

Makes 2 big pancakes. Flip quickly because they cook fast.

Anyone have any ideas how to make these savory? Is it just taking out the sweetener that makes them savory, or is it adding any seasonings?

 

I'd like to try and top one with GLOP but I've never made anything like this "savory." (I'm betting I'm making this way harder than it needs to be)

I think you could just leave out the splenda and it would be like a crepe, which can be filled with fruit (sweet) or seafood, etc (savory). Maybe play with some spices, taco seasoning would be good with glop, or maybe just plain with some added FF sour cream, FF cheese, and some lettuce for a "core" taco/burrito! :bcb_up

This recipe is GREAT made into a waffle too!! I definately went through a waffle phase .. top with fresh berries and some yogurt and you've got a delicious breakfast!

Just made these last night (am on flex) and they are DELICIOUS!!!! Has anyone made them into muffins??? was thinking of different possibilities.

That's the recipe I've been using to make waffles, but corn meal instead of oatmeal and yogurt thinned with milk to make it pour easier. It's a good basic recipe.
