Recommended Posts

Hi all,

I made this one for dinner last night and it was yummy! The kids gobbled it up.

Enjoy!

Christine :D

Core Meatloaf

1 lb. ground sirloin

1 packet Lipton onion soup mix

1/2 cup ketchup

2/3 cup quick-cook oatmeal

1 egg

about 1/4 - 1/2 cup water

Mix all together, put in a prepared casserole dish or loaf pan and cook at 375 degrees for 35-45 minutes.

I made this the other night and there were no left-overs! And I even doubled the recipe!

About the serving size - I would guess one serving per 4 oz of meat. Although my guys would say 8 oz per serving! :headover:

I'm new to Core. Can anyone tell me whether Lipton onion soup mix is Core?

Thanks.

I'm not seeing it listed by brand, but on p. 10 of the CFC onion soup mix is listed as core.

WOW, this meatloaf is awesome! I am not doing core, has anyone figured points for this recipe? A keeper for sure, as even my 8 year old meat hater gobbled it up!

Thank you, Thank you, Thank you for this recipe! I have never made meat loaf in my life, last night I came here looking for a recipe for ground beef, and lo and behold I actually had all the ingredients for this on hand! Everyone including my 20 month old dd loved this. Will definately make this again.

Yes. Any ground meat that meets core requirements would work in this recipe.

I made this for my boyfriend and my parents last month. It really was delicious and we're incredibly picky (re: snobby) eaters. I used 5-minute rolled oats (instead of quick), added some extra dried minced onion and even added a few squirts of spicy brown mustard (because I am practically incapable of leaving a recipe alone).

I formed it into a stand-alone loaf and put it on top of a cookie cooling rack that I'd lined with foil and then poked holes all over and then put that on a sheet pan (this was all to help drain any extra fat). Worked great.

Also, I doubled the recipe (we're big eaters, too) but the 4 of us only ate half anyway. Guess Core foods really are filling!

P.S. It made great sandwiches then next day.

I tried this last week and didn't get a chance to let you know how good it was. DH and I even liked it the next day cold with a salad! I also put the salsa on the top half way through! Thanks again!!:bcb_up
