recipe S.O.S - I need help...

Hello everybuddy! I am turning to you for help! :ugh:

 

I have some fresh crabmeat and want to fix crab cakes for dinner this week. I am ashamed to say that I have NEVER made them before and have no idea where to start. Searching the threads, here, I see salmon cakes...but nothing to do with crab. Any ideas? :confused:

Hi Debbie,

 

I have this recipe - maybe someone could run it through Mastercoook? I don't know the points value. My estimation is that the whole recipes is 27 points, and I got about 15 small crabcakes out of it, at approx. 2 points per cake.

 

The recipe is yummy! I'll post the original and my modifications...

 

Maryland Crab Cakes

1 lb Crabmeat or Imitation Crabmeat (8 points)

8-12 Saltine Crackers, crushed (3 points)

1/2 c. light mayonaise (8 points)

1 egg (2 points)

1 T. minced parsley

1 1/2 t. Old Bay Seasoning

1/2 t. dry mustard

1/2 t. pepper

1/2 t. Worcestersire sauce

2 T. Butter (6 points)

 

Combine ingrediants crab - woecestersire and mix well. Add enough saltines so that the mixture holds together. Shape into cakes and cook in butter, 4-5 minutes per side.

To make this recipe lighter:

Lowfat or fatfree mayo, fat free saltines, egg whites or egg substitute,

bake or broil the cakes in a spray of olive oil. You could save about 8 points!

Amount Measure Ingredient -- Preparation Method

1 pound crab meat

36 grams saltine cracker -- 8 - 12 crackers

1/2 cup light mayonnaise

1/4 cup egg -- 1 egg

1 tablespoon parsley -- minced

1 1/2 teaspoons old Bay Seafood seasoning

1/2 teaspoon dry mustard

1/2 teaspoon pepper

1/2 teaspoon worcestershire sauce

2 tablespoons butter

 

Combine crab meat with the mayo, egg and spices and worcestershire sauce.

Use enough of the crackers to hold together to form cakes.

 

Cook in butter.

Oh my, thank you both so much for your recipe input! Dinner was a huge success! :headover: I made the crab cakes, brown rice w/veggies and a salad. Mom and dad are both pleasantly surprised at my WW friendly dinners that I "test" on them!
