I don't know about everyone else, but soups are my lunch on most days. I prefer homemade so I can control exactly what goes in! I usually make a double batch and freeze it in individual servings. This is one that I used on flex long ago, but it just so happens to be CORE!!

 

Stuffed Cabbage Soup

 

1 lb. CORE ground beef

1 onion, chopped

28 oz. diced tomatoes

10 3/4 oz. tomato soup

1 t. worcestershire sauce

1/8 t. pepper

4 cups water

2 cups shredded cabbage (or a bag of cole slaw mix)

1 cup uncooked brown rice (or, mix in minute rice later in the cooking process)

 

Brown beef and onion, drain. Combine beef and rest of ingredients in crock pot. Cook on low 6-8 hours.

 

Delicious!!

That sounds fantastic....I don't suppose you know the points value of that, do you per serving? If not, I can probably figure it out.

I love soup and am always on the lookout of new recipes (especially Core). I'm printing this out so I can make it this week-end. Thanks. :wave:

Ran it through MC - if I assume that it's 8 servings, it's 3.87 points per serving. Looks like this would be 8 LARGE servings, just on first glance. 30 points for the whole pot.

I made this tonight and it is simply delicious!!! I had forgotten that it was a crock pot recipe and started making it after work........so, I wasn't going to wait the 6-8 hours for it to cook. Instead, I just kept making it in the dutch oven that I browned the meat in. I added all the ingredients, brought it to a boil and continued to cook it over medium heat about 60 mins. The cabbage is tender and it's just wonderful!

 

I'll be keeping this recipe!!!! :D
