Barb's Berry Berry Good Baked Oatmeal - 2.9 Points

Yum! Just tried this variant on Paris' oatmeal and another one from REcipezaar. I thought i had raspberries, but left them at the store. if you add 4 ounces of raspberries to this recipe it will come out to exactly 3 points!

Amount Measure Ingredient -- Preparation Method

2 cups quick cooking oats

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup splenda

2 teaspoons total of cinnamon, nutmeg and cloves - i used mostly cinnamon, with a few dashes of the nutmeg and cloves

1 cup 1% low-fat milk -- or sub the 1 cup 1% milk with 12 ounces evaporated skim milk

1 teaspoon vanilla

1/2 cup Egg Beaters® 99% egg substitute

1 teaspoon lemon zest -- (1 to 2)

1/2 cup applesauce

4 3/8 ounces blueberries

6 ounces blackberries

TOPPING

1 teaspoon Brown Sugar Splenda Blend -- mixed with some cinnamon for topping

 

Preheat oven to 350 degrees.

 

Combine wet ingredients, add to dry ingredients.

 

Bake in sprayed 8" square pan for 35-45 minutes.

 

Cut into 6 squares.

NOTES : You can add 4 ounces of raspberries to total 3 points per serving. (184 - 2 - 6) 4 point fiber cap = 3.0

 

If you substitute 12 ounces evaporated skim milk ( for the 1 cup 1 % milk) . (205 - 2 - 5 ) 4 point fiber cap = 3.5 points

 

If you substitute unsweetened applesauce, 12 ounces evap skim milk - 1698 -2 - 5 - 4 point fiber cap = 3.3 points

This sounds marvelous! I have a question though on the spices, is it 2 teaspoons each of cinnamon, nutmeg and cloves? or a combination of the 3 to equal 2 tsps?

Thanks for asking that Sandy. I'll go back and fix that in the recipe.

 

I used mostly cinnamon (about 1 3/4 tsp) and the rest was the cloves and nutmeg, to total 2 tsp.

 

it was SO good. I've got 2 pieces left for bk at work this week. i'm going to have to start making it in a bigger pan! ;) I loved how the berries at the top just *burst* with their juices kind of trailing out over the top.

On the berries... what's that in cups instead of ounces? I keep frozen blueberries (from summer picking). Will those work?

This looks soo yummy... I am not sure if we have brown sugar spenda.. I will have to look, if not what could I do???

Oops .. i'm sorry i didn't answer this before!

 

I used the ounces for the berries, because i just inputted that info into Mastercook ... I think roughly that 1 cup of fresh berries = 4 ounces.

 

Frozen berries should work just fine. I've only used fresh so far, but wanted to get some frozen berries and try it that way. I think (from what i've read re: baking with frozen berries) that you should NOT let them thaw first. (Otherwise it gets too goopy and the color runs more). I was going to look for some kind of cherry/berry blend the next time at the grocery store .. that sounded good to me!

 

Re: the brown sugar splenda .. you could probably just leave it out, or add some regular splenda. The berries truly make it sweet enough that you wouldn't notice it if you didn't have it in there!

I do not use splenda ~ if I use 1/4 cup raw sugar instead, how many points does that add for 6 servings?

when you say you can add 4 ounces of raspberrys to bring it to 3 pts do you mean ADD 4 ounces to the total amount of the other berries?

So you end up with a total of 14 3/8 ounces of berries?

1/4 cup of sugar = 4 points. If you made it into 6 servings it would be 0.67 points extra per serving ... depending on how you round it. I'd count it as a whole point myself.

Yes ... it would be 4 3/8 ounces of blueberries, 6 ounces of blackberries, 4 ounces raspberries (I used those ounces because that's the size of the fresh fruit containers i get in the grocery store! grinning)

 

The NI for this is per mastercook: Per Serving 187 Calories; 2g Fat (11.6% calories from fat); 8g Protein; 34g Carbohydrate; 6g Dietary Fiber; 2mg Cholesterol; 351mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 1 Fruit; 0 Non-Fat Milk; 1/2 Fat; 0 Other Carbohydrates. 6 servings per recipe.

I'm trying to be as "au-natural" as possible!

The NI for the basic baked oatmeal WITHOUT the (now) free fruits is ...

Per Serving (excluding unknown items): 136 Calories; 2g Fat (14.2% calories from fat); 7g Protein; 22g Carbohydrate; 3g Dietary Fiber; 2mg Cholesterol; 350mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1/2 Fat; 0 Other Carbohydrates.

 

That gives the basic baked oatmeal recipe a PP 3.

You can bake as is, or add some 0 point fruits. (Not sure if this is cheating the system or not?)

The NI for the entire dish including the fruits is PP 4. Not that big of a difference.

I'll be making this, this weekend as well. It used to always be a staple that kept me on program. I *think* I have everything for this in my cupboard! (Except the brown sugar Splenda)
