cherry wheat pancakes

Prep 7 minutes * cook: 13 minutes

 

2/3 cup all purpose flour

1/3 cup whole wheat flour

1 tablespoon granulated sugar

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup lowfat buttermilk

1 large egg, lightly beaten

1 tablespoon vegetable oil

2/3 cup chopped dried sweet cherries

cooking spray

1 1/2 teaspoon powdered sugar

 

Combine flours and the next 4 ingredients in a bowl; Combine buttermilk, egg and oil and add to flour mixture stirring until smooth. Heat griddle and spray with cooking spray. Each pancake is 1/4 cup batter. Turn pancakes when bubbles and edges look cooked. Sprinkle completed pancake with powdered sugar.

Im sure that this recipe could easily be lightened by using egg beaters and ommiting the oil..and replacing the sugar with splenda..

 

I haven't tried it yet though...
