Chicken-Rice Bake - 6 pts

I have made this a few times and everyone seems to like it around my house. Just thought I'd share it . . .

 

Chicken rice bake

 

 

1 can (10.75 oz) 98% FF cream of chicken soup

 

1-1/3 c. water

 

¾ c. uncooked white or brown rice (add 20 min. to cooking time for brown rice)

 

2 c. (at least) broccoli florets (I use 3-4 cups)

 

½ t. onion powder

 

¼ t. black pepper

 

1 T. soy sauce

 

4 skinless chicken breasts (3 oz. each)

 

 

Mix soup, water, rice, broccoli, onion powder, pepper & soy sauce in 2-qt shallow baking dish. Top with chicken. Sprinkle additional pepper on chicken.

 

 

Cover and bake at 375 degrees for 45 minutes (65 with brown rice).

 

 

4 servings

 

6 points per serving

Thanks - this one sounds easy enough that even I can't mess it up! :D And I don't do spicy stuff, so this is perfect for me. I'll have to put it on the menu plan this week.

just made this one and it is absolutely delicious! Sooooo juicy!

I used mixed veg instead of broccoli...

I am making this for dinner tonight...but with green beans instead (DH's request).

 

It looked good going into the oven :)

I make this quite often but with no veggies in it, so I increase the rice portion, but it is awsome.

thank you for this. i put it through the recipe builder. its only 8 points plus. we are having this tonight! i calculated this using a pound of chicken. it would be a point less a serving if using 12 oz as directed above.

i am eating this now as i am typing. i made this using fat free chicken broth intead of water and add mushrooms along with the broccoli. it came out delicious. the only problem was that after baking it for 65 min. (used brown rice), the rice was still hard. i took it out of the casserole dish and simmered it in a pan with extra water until the rice cooked. next time i make this i plan on pre cooking the brown rice before i add everything to this casserole. i plan on making this regularly. thank you for the great recipie

You might not want to add so much water/chicken broth if you precook the rice, as the rice won't soak as much of it up. Just a thought.:bcb_smile
