Best Diet Soda/Cake recipe..so far

I had originally posted this under St. Patrick's Day ideas but decided to try it on my family this week as our weekly dessert. They said it was their favorite so far.


1 box yellow cake mix

1 box sf pistachio pudding mix

1 can diet sierra mist soda

1/2 - 1 tsp almond extract


Makes 12 (3 point) servings


Mix all ingredients together, just ingredients listed and either bake in a 13 x 9 (sprayed with Pam) cake pan or, I prefer to use a 12 cup muffin tin as it measures the portions for me that way. Bake at 375 until knife inserted comes out clean. Serve with a dollop of ff cool whip and enjoy.

Any combination will work. I f you can't find Sierra Mist, try diet Sprite.

I can't wait to try this...my question is does this fall apart like other diet soday cakes? I love the taste of them but hate that they fall apart so easy...I have not made one with adding a pudding mix...so maybe that is the difference?

I put 1/2 a cup of unsweetened applesauce in mine along with the diet soda and that really seems to help
