Zucchini Bread / muffin recipe

Hi everyone,

 

I was wondering if anyone had a good low point or Core zucchini bread, cake, or muffin recipe as I got this big bag of zucchini at the store the other day and they are starting to get soft.

Hi

We Use This Recipe All Of The Time. It Works Out To Only One Point Or Less. 6O CAL. TRACE OF FAT AND 4 FIBER 24 MUFFINS

2 CUPS WHEAT BRAN

2TEASPOONS CINNAMON

1/2 CUP SPLENDA SWEETNER

1 TBSP VANILLA

2 1/2 CUPS OF DIET SODA (PREFERABLY THE ONE MADE WITH SPLENDA)

1/2 CUP RAISINS

2 CUPS GRATED ZUCCHINI

2 CUPS WHOLE WHEAT FLOUR

2 TSP BAKING POWDER

MIX THE WHEAT BRAN WITH THE SODA, ZUCCHINI, AND RAISINS LET STAND FOR 15 MIN BE SURE AND MIX THE BAKING POWDER INTO THE FLOUR WELL BEFORE YOU ADD IT. THEN ADD OTHER ING. BAKE AT 350 FOR 15 MIN


EVERY DAY I TAKE ONE MORE STEP. WITH GOD ON ONE SIDE AND GOOD FREINDS ON THE OTHER HOW CAN I NOT MAKE MY GOAL.

What size muffin pan should I use to get 24 muffins?

are they standard, mini or those giant texas ones?

I've been looking for 1 point muffins - this sounds great!

The recipe looks great, but what flavor diet soda should I use? Sprite, 7up, Club soda?
