Garlic Lime Chicken

I got this off the Flylady website a couple of years ago. It's SO delicious! My whole family loves it. I just switched the regular margarine for FF to make it Core. You may want to double recipe (except for the chicken) - my family wanted more of the sauce!

 

Garlic Lime Chicken

 

1 teaspoon salt

1 teaspoon pepper

1/4 teaspoon cayenne pepper

1/4 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon thyme

6 boneless skinless chicken breast

2 tablespoons fat free margarine spread

1 tablespoons olive oil

1/2 cup chicken broth

4 tablespoons lime juice

 

In a bowl, mix together first 7 ingredients. Evenly sprinkle mixture on both sides of chicken breasts.

 

In a skillet heat fat free margarine spread and olive oil together over medium high

heat. Saute chicken until golden brown on each side, about 5 minutes on either side. Remove chicken and add lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the pan. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly coat and serve.

SERVING SUGGESTIONS: Serve with brown rice, steamed kale and baked

sweet potatoes.

This is a great recipe! My family loves it, event he ones who are s"sick" of chicken. I have a couple breasts of this in the fridge for leftovers tonight! therese

Just wondering if anyone has looked at any of the other Saving Dinner Recipes to see what is Core or could be quickly modified. Is there an easy way of doing this besides going item by item and comparing them to the approved Core list?

This recipe looks good. I've never cooked with lime juice before.

 

Does anyone have suggestions for making this a crockpot recipe? I'm going to the store tomorrow and picking up these ingredients.

This is a great recipe, I'm actually making this tonight for the second time. For the seasoning I just use my Emeril's, it has all of the ingredients already in it. I highly recommend this.

Here is a recipe I tried. I made one change, I cooked the rice seperately.

Garlic Lime Chicken with Rice

Ingredients:

 

2 lbs chicken thigh, bone in, skinless

1 can chicken broth

1/4 cup lime juice

3 tbsp olive oil

1/2 tsp pepper

1/2 tsp thyme

1 cup rice

2 cloves garlic

 

Directions

combine all in crock pot and cook on low 8 - 10 hours. Add rice in last 15 mins.
