Peach & Cinnamon Multigrain Muffins

adapted from Moosewood Restaurant Cooks at Home

 

1 egg

2 Tbsp. canola oil

1/2 cup natural applesauce

1 cup lowfat buttermilk

1/3 cup brown sugar

1/2 cup rolled oats

 

1 cup whole-wheat flour

1/2 cup white flour

1/2 cup wheat bran

1/4 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1 Tbsp. cinnamon

 

2 cup chopped peaches (I used frozen)

 

1. Pre-heat oven to 400 degrees. Oil 12-cup muffin tin.

1. Mix egg-oats.

2. In a separate bowl, mix whole-wheat flour - cinnamon.

3. Mix wet mixture into dry mixture.

4. Fold in chopped peaches.

5. Bake for 20 minutes. Cool for 5 minutes.

6. Enjoy!

 

Yield: 12 muffins

Points: 3 points per muffin

I'd like to add that these are not very sweet, so if you like a sweeter rather than "wheatier" muffin, you might want to add more brown sugar or splenda. I also did not pack the 1/3 of a cup of brown sugar very tightly, so that might be part of the issue. I personally like them less sweet so they are less likely to be a trigger for me. Other than that, these are tasty.

These look yummy ... thanks for posting the recipe and the review Suzie!!

 

I may add some of the SF DV cinnamon syrup - and make a couple substitutions of eggbeaters and brown sugar splenda to see if it reduces points any. Thanks!!

these sound good. I think I'll sub the brown sugar for splenda/molassas though:)

These sound good, and the fact that they are less sweet is a good thing for me since sugar can be such a big trigger. I will have to give these a try!
