ginnyb 0 Posted May 30, 2006 Fresh Veggie Salad 2 cucumbers, peeled, seeded, and chopped 3 tomatoes, chopped 3 stalks celery, chopped ½ large sweet onion, chopped ½ red pepper, chopped ½ green pepper, chopped 1 can black beans, drained & rinsed (I like Mrs. Grimes) 1 can corn, drained Mix all the above ingredients and chill. I put Ken’s Sweet Vidalia Onion dressing on this when I serve it, but you could use your favorite dressing. If you put the dressing on and then have leftovers it gets too watery. You may have to drain it a bit after you chill it because the veggies release liquid—especially the tomatoes. This will last in the frig. up to a week if you leave the tomatoes out. Because of all the fiber, I count this as 0 pts. per cup without the dressing. Just add the pt. value for whatever dressing you use. I love this salad and keep a big bowl in the frig. all the time. Sandy P. 53 0 Posted June 18, 2006 I made this 2 weeks ago and we loved it. a 1-cup serving with dressing was llike a meal in itself. It makes a lot, but if you keep it in the fridge and drain it daily, it will keep for a week or better. Definitely a keeper and great for picnics also. Fallen, but not defeated! I wasn't really sure what to expect because I am not a big veggie person and I detest the smell of cucumbers....but I decided that I must give this a try. While looking for the Sweet Vidalia dressing, I found some Paul Newmans Lite Sesame Ginger dressing at the store for less fat and decided to give it a try. The results??? I am SOLD. I added some finely chopped broccoli and a zuccini and put the following marinate on it: 4Tbls olive oil 1/2 cup white vinegar Juice of 4 Key Limes 6 pkts Splenda 1 Tbls poppy seeds Salt and Pepper to taste This dressing has a bright flavor that really flavors the dish. Guest tinka Posted June 2, 2007 Wow! I just made this salad and I KNOW it will be a staple for me. I don't think it will need a salad dressing, just seasoned salt and/or ground pepper. Also, I love the idea of mixing it with cottage cheese. I can also see putting it on fresh spinach leaves. I am also thinking of substituting canned garbanzo beans for the black beans. MaureenF 10 Posted July 24, 2007 This is very similar to a recipe I make, but also added is bulgur. For dressing, I use ff Italian with some balsamic vinegar. It is core and is very filling.
