Chicken Enchilada Casserole

Hello all,

 

I tried this one for dinner tonight, and it comes highly recommended! The servings are quite large, too. It is from the WW Community Boards - a real winner! :)

Chicken Enchilada Casserole

Ingredients

 

12 small corn tortillas

15 oz. canned black beans, drained

15 oz. canned tomatoes, undrained

1 10 oz. can chili verde sauce

3 oz. fat-free cream cheese

2 oz. Kraft Pepper Monterey Jack Cheese, grated

1/2 cup onion(s), finely chopped

4 tsp. Taco Bell Home Originals Taco Seasoning Mix

10 oz. Campbell's 98% Fat-Free Cream Of Chicken Soup

1 pound FROZEN boneless, skinless chicken breast

Fresh cilantro to taste

 

Instructions

 

Combine all but cheeses and tortillas in crock pot and cook all day on low. During the last 30 minutes, add cream cheese to melt and leave the lid off.

 

Tear tortillas into halves and layer in 9 x 13 baking pan (sprayed with nonstick spray) with chicken mixture. Top with pepperjack cheese and fresh cilantro. Bake at 350 for 20 minutes or until cheese melts. Let stand for 10 minutes before serving.

I've got this cooking right now -- what a great excuse to haul out the crockpot! :) It smells fantastic already!

 

The only worry is that I'm not sure how I'm going to resist adding a few more ounces of cheese when the time comes! But since this is a 'meal in itself' I think I'll just measure carefully, and serve it with a big salad.

 

Quick question; "1 10 oz. can chili verde sauce" is green enchilada sauce? And I used diced tomatoes; I bet diced tomatoes with green chilis would be even better.

:bcb_bravoThis recipe smells great while its in the crock pot. My son made it in the dorm yesterday (Sunday) and it drove the football team nuts all afternoon. When he took it down to the commons to put it in the oven he was followed by 4 300lb 6'4" offensive linemen (just like him). The boys topped it with shredded lettuce and fresh diced tomatoes (the way real enchiladas are served). My son is an exercise science major and the only Mexican on campus that isn't a foreign student. He makes a Mexican dish every Sunday. Spring football training starts in 6 days and today the offensive line coach (he got the 6th serving) called me and asked if we could make this recipe for the next recruiting weekend. They can't believe that this is only 6 points and satisfying enough for big guys!!:bcb_bravo

How soupy should this be?? Mine's almost done and there is a LOT of broth in it. It looks like soup. Is that how it's supposed to look or is it b/c I had to substitue a can of red enchilada sauce for the green verde sauce??

I've never had the verde sauce and wasn't sure of we would like it. Is it thicker than the red sauce?

Bumping this one up.

 

Made it last night and it was fantastic!! It is now my new favorite chicken dish. My DD wished there was more cheese so when I make it again I'll just sprinkle extra on her serving and mix it in to melt.

 

Mine also came out of the crock pot on the soupy side but "firmed" up very nicely in the oven, but that was using the green sauce - I don't know if there's a consistency difference between sauces.

Mine is in the oven now and I was wondering about it being so soupy too. I was thinking next time maybe drain the tomatoes too. Not sure yet though. The 2 oz of cheese appeared to be fine. I grated mine on a fine grater and it seemed to make more, or look like more anyway. Oh it smells heavenly now.

Sounds delicious! I had everything on hand except for cheeses & tortillas. I did sub the taco seasoning for a different brand but I don't think that would be a deal breaker.
