Beef Sandwiches

Makes 12 servings

Ideal slow cooker size 4-5 Qt

 

2 lb Boneless Beef Roast

3 medium sized onions, chopped

2 cups red wine vinegar

3 bay leaves

1/2 teasp salt (optional)

1/4 teaspoon ground cloves

1/2 teaspoon garlic powder

 

1)Cut roast in half. Place in slow cooker.

2) Combine onions, vinegar, bay leaves, salt, cloves, and garlic powder. Pour over roast.

3)Cover. Cook on low 11- 12 hours.

4)Discard bay leaves, Remove meat. Shred with fork.

5)Serve on Hamburger bun (count the points for the bun!)

 

Per serving: 230 calories, 6g fat (1.5 sat, 0 g trans), 45 mg chol, 330 mg sodium, 27g carb, 4g fiber, 4g sugar, 19 g protein.

 

Note: If you prefer a somewhat sweeter flavor and your diet allows, you may want to add 1/4 cup brown sugar, 1/2 cup raising, or several tablespoons of Splenda to step 2.
