MEXICAN SKILLET FOR TWO

 

8 oz. ground turkey or beef

1/4 c diced onion

3/4 c corn

1/2 c salsa

1/2 c ff cheddar cheese

1/2 c crushed corn chips

 

Spray skillet. Brown meat and onion. Add corn, salsa and cheese. Top with crushed chips, if wanted.

 

6 ww points without chips

Pandorra - my veg soup base is 8c. water, 3 tb bouillon, 29 oz crushed tomatoes, italian seasoning, salt, and garlic to taste

 

Throw in: chopped onion, celery, zucchini, yellow squash, mushrooms, carrot, eggplant, broccoli, or whatever zero pt vegetables you want. I most commonly use 1 onion, a couple of zucchini, a couple of yellow squash, and most of a package of mushrooms.

small potato - stick it in seran wrap and microwave for 10 mins -- 2.5 points

less then a spoon of fatfree sour creme dip- 1 point

less then a handful of fatfree shredded cheese - less then a point

shredded onions-0 points

 

 

microwave or boil the potato. spoon on some sour creme, sprinkle some cheese and onions-voila.

 

this is my fav thing EVER. everytime i feel like being bad and eating somethin super cheesy and carby, i eat this. its really little points . and i eat it with a salad and am in heaven

1 apple cut up

1 can of crused pineapple in pineapple juice

I guess it taste like caramel apple?

We love this recipe, the plantains are very sweet when roasted.

 

Roasted Plantains With Carrots

Serving Size: 2

POINTS: 3

1 Large Plantain

2 Large Carrots

1/2 Medium Onion -- cut into chunks

2 Teaspoons Olive Oil

1/2 Teaspoon Salt

 

  1. Preheat oven to 450F.
  2. In a large bowl, combine all the ingredients.
  3. Transfer them to a sprayed pan and bake for 20-25 minutes, or until the plantains are tender.

Use this filling in tart shells or drizzled over fruit. It sets quite thick so you might want to thin it for a fruit drizzle! It is excellent on pavlova with fresh blueberries sprinkled over. I have also made it with all lemon juice for a really lemony filling, which I love!!

 

Citrus Filling

Serving Size : 4

Points : 1 for 3 tablespoons

 

3 Tablespoons Splenda

1 Egg Yolk

1/4 Cup Lemon Juice

1/2 Cup Orange Juice

4 Teaspoons Cornstarch

 

BLEND together Splenda and egg yolk. Stir well. Add juice to egg yolk

mixture. Mix thoroughly. Add cornstarch. Stir well.

 

POUR into a small saucepan. Cook over medium heat, stirring frequently,

until thickened (approx. 2 minutes). Chill until ready to use.

 

Yield:

"12 Tablespoons"

Pineapple Mahi Mahi

12 oz Mahi Mahi Fillets (42g)

1 cup crushed Pineapple (25g)

small box of raisin (¼ cup or 42.5g)

¼ cup shredded raw carrots

 

Preheat oven to 350° Arrange fish in baking dish. Spread top with crushed pineapple. Scatter carrots and raisins. Bake for 20-30 minutes or until fish is flaky and tender. Serves 3.

 

(1/3 of pkg or 4 oz)

Drive thru Breakfast sandwich substitute (3 pts)

 

1/4 c egg beater (1/2 pt)

1/2 slice 2% american Cheese (1/2 pt)

1 tbl Hormel real bacon bits (1/2 pt)

1 toasted Thomas's Light Eng. Muffin (1 pt)

1/2 tbl promise lite butter (1/2 pt)

 

Put egg beater in small pan and scatter bacon bits over it. Let it "set up" and then flip it over. Place cheese in center and fold sides over top (to fit on english muffin). Butter the muffin, salt/pepper the "omelet" stack on the muffin and Enjoy! Just awesome! (I even put red hot pepper flakes on the egg beaters sometimes)

This is the quickest, easiest meal you will EVER make... it's great to mix everything up and stick it in the fridge for lunch during the week. This and a 3pt grilled cheese is wonderful during the wintertime. We also found that by adding 1lg can of chicken doesn't change the points... I think it's time to make this one up again.

 

I feel ya Pandorra - SOOO many ingredients! UGH I DO NOT have the patience for that!

 

 

I really enjoy 5 Can Soup, 2 points per cup.

 

1 can each of:

 

Corn

Black Beans

Mixed Vegetables

Tomatoes (I used Italian style diced; a friend used tomatoes with chiles)

Progresso Minestrone Soup

 

 

Just dump all of the ingredients into a large pan, bring to a boil. Reduce to a simmer and simmer for awhile. Enjoy!

Crab Au Gratin (4 servings, 4.5 pts each)

 

1 8 oz package Louis Kemp imitation crab meat, flake style (USE louis Kemp); tear it up good

3 tble lite butter (1 pt per tbl)

1 diced small onion, fine

1 stalk dices celery, fine

1/4 cup flour

1 can fat free evaporated Milk

a little pepper

 

spay a 2 qt baking dish or an 8x8 dish with cooking spray.

Tear up the louis kemp crab meat well. In a large deep skillet so you can really stir, melt butter and saute the onions and celery, once celery gets a little soft, stir in flour (it will lump up), keep stirring and gradually pour in evaporated milk while mashing lumps up the best you can as you go and stirring. sprinkle a little black pepper in. Keep stirring constantly and let mixture thicken, stir in crab meat.

Pour into prepared dish and bake at 350 for about 10-15 minutes till you get that baked look on top.

 

We love it just like this (mine with a lot of black pepper as I love pepper)

If you want you can put 1/2 cup 2 % shredded cheddar on top before you put in the oven and add 1 pt per serving (5.5 pts)

I made this last nite. I added Old Bay seasoning to it. It turned out pretty good.

 

It reminds me of the cream of crab soup I make without all that cream and whole milk.

Tried The Pork Chop Bake last night....I LOVED it! But the rest of my family wasnt crazy about the onion soup. Have any of you tried any CORE variations to this recipe? I was thinking FF Chicken broth maybe

 

Any suggestions will be appreciated...thanks in advance buddies!

Just made this and its reallllly good and suprisingly easy- makes 1 serving... would easily be doubled. Was sad when I finished it because it was so good!

 

1 tsp of butter

1 Corn on the cob

1 Cup chicken stock

Scallions

 

Melt butter in saucepan, sautee corn (cut off cob) for a few minutes (5ish?). Add chicken stock and puree in blender. Garnish with Scallions. Eat!

Oatmeal Raisin Cookies

 

3 envelopes of Kashi Go Lean Honey Cinnamon flavor oatmeal.

1/3 cup of egg whites

1 Tablespoon of canola oil

1 Tablespoon of honey

1 teaspoon of cinnamon

1/4 cup plus 2 Tablespoons of raisins

 

Preheat oven to 350 degrees. Spray 6 circles of Pam on a cookie sheet. Bake cookies for 9 minutes on the center shelf of the oven. Makes 6 cookies

Entire batch = 859 calories or 17 points

 

Note: Do not use the vanilla flavor Kashi Oatmeal. This recipe won't work with it

Cheesy Chili Chicken

 

4 4oz chicken breasts BLSL

1 can stewed tomatoes with Italian seasoning

1 can hormel turkey chili w/ beans

4 oz 2% milk shredded cheddar cheese

 

Preheat oven to 350. Place chicken in 11x7 pan, top with tomatoes. Bake uncovered for 50 minutes. Spoon chili over the chicken, bake an additional 10 minutes. Top with cheese, return to oven for 3-4 minutes or until cheese is melted. Serves 4. 6 Points.

 

This is one of my favorites with broccoli and a salad. Really filling because of the beans in the chili.

Wow! These all sound great. I'm glad I found this thread.

 

 

TURKEY SAUSAGE FAJITAS (4 serv. - 6pt/ea)

1/2 lb. turkey sausage (I use light Italian)

2 bell peppers sliced

1 onion sliced

4 low fat tortillas (7")

 

Remove sausage from casings and cut into slices and brown in pan on med. heat with a little cooking spray (or you can cook until it is like ground meat which is very good too) Add peppers & onion, stir for a little while until it is mixed in and put a lid on it, turn to low and cook for about 20 minutes. Serve on tortilla. Optional: Add ff sour cream or low fat cheese for extra points and or some salsa.

 

I always serve with ff refried beans for 1pt per serving too.

Made the Sausage and Bean Soup tonight, and it was yummy! I doubled the recipe and used chicken boullion cubes instead of canned broth. A little salty but good!
