This is a favorite at our house.

 

Basque Stew - 2 LARGE servings - 5 points each

2 teaspoons olive oil (2)

1/2 medium onion, diced

5 cloves garlic, crushed

8 oz sliced mushrooms (or more)

2 medium carrots, sliced

1 (14 ounce) can diced tomatoes

1 teaspoon paprika

1/2 teaspoon crushed red pepper flakes or more to desired taste

Salt and pepper to taste

2 fully cooked spicy turkey and/or chicken sausage, sliced (5) –check your brand may vary

1 can diced new potatoes, drained (2)

 

Heat olive oil in a large pot until hot. Add onion, garlic and mushrooms and saute until tender. Add carrots, tomatoes, paprika, red pepper, salt and pepper and simmer until vegetables are tender, approximately 20 minutes. Stir in sliced and heat through.sausage and new potatoes.

I made this last night and it was very good. Huge serving sizes and it was very filling. This will be added to my recipe rotation.

Thanks Joann....looks good.....lots of garlic and mushrooms, how can we go wrong? Going to copy this and take it up to the ranch as it's already cooling down in the West Yellowstone area.
