Chicken Stroganoff

I found this in cyberspace and made it last night. It was good.

 

Chicken Stroganoff 2.5 points per serving

1 Tbsp. + 1 tsp Olive oil

10 oz. boneless skinless chicken breast cut in 1/2" strips

2 cups sliced mushrooms

1 cup chopped onion

1 cup chicken broth low sodium

2 tsp. flour

3 Tbsp. sour cream fat free

1 tsp red wine vinegar

1 tsp Dijon mustard

1/4 tsp. pepper

 

In medium skillet heat 2 tsp oil; add chicken. Cover over medium high heat stirring frequently, until golden brown. Remove chicken from skillet and set aside. In same skillet heat remaining 2 tsp. of oil; add mushrooms and onion. Cook stirring frequently until golden brown. In a small bowl with a wire wisk, combine broth and flour, blending until flour is dissolved. Add to skillet. Stirring constantly, bring liquid to a boil over high heat. Reduce heat to low. Simmer 10 minutes, stirring frequently. Stir reserved chicken into broth mixture; simmer 5 minutes. Remove skillet from heat; stir in sour cream, red wine vinegar, mustard and pepper.

 

I served with noodles and a salad.

Could you please post how many servings...this sounds so good, and I have all the stuff for it, but I have a family of 5, so trying to figure that out point wise, ect. I plan on serving it with brown rice. YUMMY

I have 4 in my family and there was leftovers. The recipe does not specify. I would say 6 servings

thanks! Making it tonight...It sounds so yummy and good!...had to post an edit. This is absolutly amazing, so yummy, and so filling served with brown rice...my kids did not rave about it...but I did. I think dh will, as well. I only had white cooking wine, not red cooking vinegar wine ~ but it worked out amazingly. I could go on and on...I will make it for the next get together I go to!

I made this for dinner tonigh and it was a BIG hit. :bcb_bravo Thanks for sharing, Karen! EXCELLENT!

 

I didn't have red wine vinegar so I used a teaspoon of red wine. Who would have thought that a teaspoon of something would add so much flavor. That's what made it stroganoff.
