Hey..............Do you like Pizza? How about pasta?

 

Well, then this is the recipe for you! And it's LOW POINT too....!!!

 

The following recipe lists regular pasta, but I'd use Whole Wheat pasta and lessen the point value a bit more........you could also use low fat mozzarella and egg beaters too.

 

Pasta Pizza

 

1 lb ziti, rigatoni or other medium shaped pasta

1 8 oz can of tomato sauce

2 tbls minced fresh oregano

2 tbls minced fresh parsley

1/4 cup grated Romano cheese

1 tsp minced garlic

1 tsp crushed red papper flakes

1 14 oz can crushed tomoatoes

2 lrg eggs, lightly beaten

1 med bell pepper, seeded and chopped

1 large yellow onion, sliced thin

1 cup shredded mozzarella cheese (approx 4oz)

**Grated parmesan for serving

 

Preheat oven to 400........Spray a deep dish pizza pan or a 9X12 glass baking dish with cooking spray.

Cook the pasta according to directions but reduce cook time by 1-2 minutes. Drain and transfer to a large bowl.

Add tomoato sauce, herbs ad Romano cheese to pasta and toss.

In a med. bowl, mix the garlic and red pepper with the crushed tomatoes, and eggs. Pour this mixture over the pasta and mix.

Transfer the pasta to the prepared pan or glass dish. Layer the remaining ingredients over the pasta, finishing with the mozzarella. Use a flat plate or rolling pin to lightly flatten and compact the veggies and pasta.

Bake for 15 minutes, then remove from the oven and let cool slightly. Cut into wedges or squares and sprinkle with extra parmesan.

 

Per serving (based on 12 servings)

213 cal.....10 gr protien.................34 carbs............5 gr fat...............3 gr fiber

 

12, 4 point servings......
