Kim's Cabbage Patch Stew

Recommended Posts

This is a family recipe that I've made a little more WW friendly. It's really filling and is filled with beans and veggies, so you'll get your veggie serving in. A serving is about 1 cup of stew. And I make sure to make 8 dumplings so I know that 1 dumpling goes in each serving.

Kim's Cabbage Patch Stew

8 servings - 5 points/serving

1 lb lean ground turkey (93%)

2 medium onions, thinly sliced

1.5 cups coarsely chopped cabbage (big pieces are better!)

1 cup water

1/2 cup chopped celery

1 can (16 oz) stewed tomatoes

1 tsp salt

1 can (15.5 oz) kidney beans

1/4 tsp pepper

2 tsp chilli powder

2 cups heart smart bisquick

2/3 cup skim milk

1. Brown the ground meat and drain.

2. Add onions, cabbage, and celery. Cook and stir until veggies are light brown

3. Stir in tomato, kidney beans (w/ liquid), water, salt, pepper, and chilli powder. Heat to boiling. Once stew is boiling, reduce heat to low.

4. Make the dumplings by mixing the bisquick and milk together until soft dough forms. Drop by spoonfulls on to hot stew. To make it easy points wise, make 8 dumplings, but you can make however many you want.

5. Cook uncovered over low heat for 10 minutes. Cover and cook an additional 10 minutes.

6. Sprinkle with paprika (if desired) and served.
