Crockpot Breakfast Cobbler

I found this recipe on the Core Tip Exchange by easystreeter.

 

Its so easy and good. I make a batch on Sunday and have it all week long.

 

6 lg apples peeled, cored and sliced

1 1/2 cup quick oatmeal

2 tbs cinnimon

1/2 cup brown sugar splenda (I use 1/4 cup)

1 small box banana ff/sf pudding (vanillas fine)

3/4 cup water

 

Mix all together and cook in sprayed crockpot for 6 hours on low. The sides tend to stick so I stir a few times during cooking.

 

I have been using peaches and or pears instead of some of the apples.

 

This is great heated up in the microwave.

For those on flex, i put it thru Mastercook.

I guestimated 8 servings? 188 calories, 1 fat, 4 fiber = 3 points

 

7 servings = 215 - 2 - 5 = 3.6 points

 

6 servings - 250-2-6 = 4.4 points (all with fiber cap)

 

Might be nice for a holiday brunch.

The brown sugar splenda is not CORE is it? How many points would you count for that?

In my Food companion I could not find Splenda brown sugar subs. but I found Sugar twin brown suagar subs marked as core. I did find regualar Splenda marked as Core. Maybe I have an older book. You could use any sweetener you prefer and count the apppropriate points as needed if not a core sweetener. It doesnt need much sugar added, because pudding mix and fruit sweeten it also.

Hi, the original recipe didn't specify instant or cook pudding. I use instant as that was what I had on hand and that worked fine.
