Apple & Goat Cheese Pizza

This is really tasty and a great way to make use of apples.

 

For an individual pizza:

2 pieces of reduced fat crescent roll dough per pizza

1/4 medium sweet onion sliced thin (use sweet onions for the best results)

1 small tart apple, peeled, cored and sliced into thin pieces

1 tsp canola or extra light olive oil

2 tbsp goat cheese crumbles

 

Preheat the oven according to crescent roll dough package.

Heat the oil in a small pan, and sautee the onion until it starts turning clear.

Add the apple slices to the sautee pan, you just want them to get a little browned.

Roll the 2 pieces of crescent roll dough per mini pizza together and spread it out on a nonstick pan into a thin, flat, pizza crust shape.

Bake the pizza crust alone for about 3 minutes.

Remove the crust from the oven, and add the onions & apple, and then sprinkle the goat cheese on top.

Put back in the oven for another 6-7 minutes.

Remove from oven & enjoy!

 

As written above, each mini pizza would be 8 points.

 

I am sure you can play around with other crust ideas, from pita breads to store bought pizza crust. Using a one point pita bread would bring the points down quite a bit.

 

The toppings together are sweet & savory and just really perfect for a cool fall day.

That sounds so good! When you use the cresent roll dough, does it have to be rolled super thin?
