Pumpkin muffins??

I recently saw a recipe for pumpkin muffins, or pumpkin bread, that had shredded carrots in it, as well as unsweetened applesauce. Now that I went to the store and bought the ingredients, I can't find the recipe anywhere!! I know I'm not going crazy... well, at least I THINK I'm not going crazy! :crazy: Has anyone seen (or tried) that recipe? I really would appreciate it if someone could help me find it! Thanks! Here is one for Carrot Cake Muffins found it in a search never tried them and do not know if the points are right will keep looking for the other.

 

 

Carrot Cake Muffins!

--------------------------------------------------------------------------------

*3 Points per muffin

*18 servings

 

1 package Spice Cake Mix

3/4 cup Egg Substitute

1/3 cup Unsweetened Applesauce

1 1/3 cups Water

1/2 cup Raisins

1 cup shredded Carrots

Non-stick Cooking Spray

**CREAM CHEESE FROSTING**

2 cups powdered sugar

4 ounces reduced fat cream cheese

1 teaspoon vanilla extract

2 teaspoons skim milk

In large bowl, add cake mix, egg substitute, applesauce, and water. Mix

with beater on low for 30 seconds. Mix on medium for 2 minutes.

Add shredded carrots and raisins. Mix by hand until incorporated.

Spoon equal amounts into muffin tin (18 total), sprayed with non-stick

cooking spray.

 

Bake at 350 degrees for 18-21 minutes, or until toothpick inserted into

center of muffin comes out clean.

 

Makes 18 muffins

 

Each Muffin has:

Calories: 148

Fiber: 0.5

Fat: 2.8

 

Count points separately for frosting

 

Cream Cheese Frosting (1 PT)

In electric mixer bowl, beat frosting ingredients until smooth and creamy.

Spread on cooled cake.

pumpkin carrot muffin

POINTS® values per serving | 1

Servings | 12

 

Desserts | Ingredients1 cup canned pumpkin

1 tsp ground cinnamon

2 item egg

1 tsp vanilla extract

6 Tbsp all-purpose flour

1 tsp baking powder

4 Tbsp raisins

1/2 cup shredded carrots

2/3 cup non-fat instant dry powdered milk

10 packet Sweet 'N Low Granulated Sugar Substitute

2 tsp pumpkin pie spice

 

Mix all ingredients. Spray muffin tin with Pam. Divide equally. Bake at 350 F. for 25 to 30 minutes. Makes 12 muffins.
