Dhal Soup

2 Tbsp butter

2 clove garlic clove(s)

1 large onion(s)

1/2 tsp ground turmeric

1 tsp Garam masala

1/4 tsp chili powder

1 tsp ground cumin

28 oz canned diced tomatoes

1 cup dry red lentils

1/2 medium lime(s)

2 1/2 cup vegetable broth

1 1/4 cup light coconut milk

 

Melt the butter in a large saucepan. Saute the garlic and onion for 2-3 minutes. Add the spices and cook for another 30 seconds.

 

Stir in the rest of the ingredients and bring to a boil. Reduce heat to a simmer and cook for 25-30 minutes, until the lentils are tender.

 

It's really tasty with some naan bread or pita on the side.

 

4 hearty servings @ 7 points each

My roommates and I made this last weekend. Not what I was expecting, but very tasty.

 

Until we burned the bottom.

 

Then we had to try to fix it, mostly by adding a lot more spices, cilantro, lime juice and coconut milk (to their portion, I kept mine "light").

 

Sigh.

 

But try it, it's different!
